Chop the wild garlic leaves. In a large bowl, mix the wild garlic, egg, ricotta, parmesan, flour and lemon vest. Season.
In a large frying pan, heat up the oil. Add equal spoonfuls of the mixture into the pan, pressing them lightly with the back of the spoon. Fry for approx. 2 minutes until golden before flipping.
Once cook, drain on kitchen paper. Enjoy warm with a salad.
