These wild garlic fritters are a great recipe for using up leftovers in your fridge. I’ve personally been enjoying this recipe for my lunches on my work from home days, as they are so easy to cook and reheat.
Wild garlic is such a versatile produce for cooking with. I’ve already shown off a few other recipes on the blog for it to be used in, but this one punches you with taste and is an easy one to make. Fritters are one of my go-to recipes for easy cooking. Beginners will love making them as there’s nothing hard when it comes to making them.

What I love about these fritters is that you can really mix them up. I personally love throwing in leftover veg into the mixture like courgettes, peppers, broccoli, anything that will pack taste into them. If you are not a huge fan of ricotta cheese, you can do any form a cream cheese.
If you are looking for a mid-week dinner or something hearty for lunch, these are going to be your next go-to recipe.
Wild Garlic & Ricotta Fritters
Ingredients
- 100 g wild garlic
- 1 egg, beaten
- 125 g ricotta cheese
- 20 g parmesan cheese, grated
- 1 tbsp plain flour
- 1 lemon, zested
- oil, for frying
- salt and pepper
Instructions
- Chop the wild garlic leaves. In a large bowl, mix the wild garlic, egg, ricotta, parmesan, flour and lemon vest. Season.
- In a large frying pan, heat up the oil. Add equal spoonfuls of the mixture into the pan, pressing them lightly with the back of the spoon. Fry for approx. 2 minutes until golden before flipping.
- Once cook, drain on kitchen paper. Enjoy warm with a salad.
