Pre-heat the oven to 180 C. Peel, core and chop the apples into wedges and place into a bowl. Once completed, add the apple cider vinegar to stop the apples going brown.
Mix the flour, sugar and cinnamon in a bowl. Mix to combine. Add the vanilla extract/ hazelnut syrup and mix together. Add the dry ingredients to the apples and mix until combine.
Lightly spray your pie dish. Add the pastry to the bottom and cut off the excess, trying to keep it as one large piece as possible. Add the filling.
Using cookie cutters, cut the remaining dough into leaves and place on top till covered. cover in an egg wash and bake in the oven for 40 minutes, until golden on top. Serve with custard, cream or ice cream.
