Prior to baking, take the feta out of the fridge and cover it with a piece of kitchen roll. Leave at room temperature for an hour to soak up the moisture.
Once ready to cook, take the kitchen roll off and place it in an oven-proof dish that's large enough to fit the cheese snuggly. Preheat the grill. Drizzle the honey and add the thyme and honey on top. Season with salt & pepper.
Place under the grill and cook for 7-10 minutes, until cooked and golden. Serve immediately with warm bread and a good glass of wine.
