To make the dressing, combine all the ingredients into a bowl. Wisk until smooth. Taste and adjust with salt & pepper.
In a bowl, toss the prawns with 1/3 of the dressing, making sure to get a good amount of the garlic. Allow it to sit for 10 minutes.
Heat a large skillet over medium-high heat and cook the bacon until crisp. Add the prawns and cook for about 2- 3 minutes.
Meanwhile, prep your salad. Combined your mix salad and tomatoes in a salad bowl and toss with a little dressing. Slice your avocados and add them to your salad.
Once cooked, add your prawns and bacon to your salad. Sprinkle over the crumbled feta. Drizzle a little more of the dressing on top. Season with salt and pepper and serve.
