
Because Life is Too Short for Boring Grilled Cheese…
Whenever I’m on my own for dinner, a grilled cheese is my go-to. And because I’m not someone to do anything by halves, it has to be elevated in some way. After all, life is too short for boring recipes.
Now a grilled cheese can be simple. But why does it have to be? And pretty much any soft cheese paired with fruit takes a dish to the next level. The same rules apply to a grilled cheese.
For this recipe, I was inspired somewhat by my husband’s favourite baguette sandwich from the local farmers market. Classic Italian flavours, but with a little twist. Now, the OG sandwich had mozzarella, but I never pass up the opportunity to have goats cheese. The prosciutto pairs well with it, and the chilli flakes really bring out the flavours.
When I’ve done grilled cheeses in the past, I’ve usually gone with apple as my fruit to layer in. But pears are in season and compliment the goats cheese.
The Great Debate.
Now the thing that always divides people when it comes to grilled cheeses is what to use to grill it? Personally, I do love butter. However, olive oil adds so much flavour to the bread, and as this was Italian themed, it was the only way to go. Plus, I personally think it adds a better charred to the sandwich. Much more aesthetically pleasing for the Instagram feed.
I cannot wait to share more elevated dinner recipes for one on the blog. Don’t get me wrong, I love hosting and creating big meals. But there’s something so luxurious about taking something so simple and taking it to the next level. It’s a treat, but everyday.




Pear, Prosciutto & Goats Grilled Cheese
Ingredients
- 2 slices of bread
- Extra virgin olive oil
- 2 tbsp fig preserves
- Goats cheese, crumbled
- 1 slice prosciutto
- Handful of rocket
- ½ pear, sliced
- Pinch of chilli flakes
- Pinch of chopped rosemary
- Balsamic Glaze
Instructions
- Add fig preserves to both slides of the bread. On one half, add rocket and prosciutto, torn up if needed.
- On the other side, add goats cheese and slices of pear. Drizzle both sides with balsamic glaze, rosemary and chilli flakes. Put both sides together and drizzle olive oil on top of the slice ready for grilling.
- Heat your skillet/ frying pan on a medium heat. Add the sandwich to the pan, olive oil side down. Press down for a few minute until the bread is golden. Drizzle oil on the other side of the sandwich and flip, grilling the other side until golden. Weight down the bread to allow the cheese to met and the sandwich to fuze together. Serve warm and enjoy.
