A Simple, Delicious Recipe to Try this Foraging Season…

I love creating wild garlic pesto this time of year. In the Yorkshire countryside, wild garlic comes to life and there are so many patches of growth to forage from.

There are some rules when it comes to foraging wild garlic, but if you are sensible and only take what you need, it’s a great activity to do on the weekend. The whole family can join in and you can create some delicious recipes from the stuff.

Wild garlic pesto is one of the easiest ones to do. In fact, this recipe post feels a little illegal as it’s really up to your choice on amounts. Love the taste of garlic? Add some more. Need a little more acid? Squeeze in more lemon juice.

What’s great about this recipe is that it can be tweaked however you like. I’ve seen some recipes with walnuts added to it which I cannot wait to try next. I’ve also seen with different hard cheeses and one even added lime which I bet was delicious.

What’s great about this recipe is that it can go into so many things and a little goes a long way. My husband loves mixing this into pasta recipes and I enjoy drizzling this onto salads in the summers. My husband is also going to use it as a sauce layer for a tart recipe he wants to try this weekend.

Wild Garlic Pesto

Prep Time:20 minutes
Cook Time:5 minutes
Total Time:25 minutes

Ingredients

  • Wild garlic
  • Parmesan, grated
  • Olive oil
  • Pine nuts
  • Lemon juice
  • Salt and Pepper, for seasoning

Instructions

  • Chuck all ingredients into a blender. There's no measurements, it is simply to taste. However, remember a little wild garlic goes a long way.
  • Once all added, blend to combine. Taste and tweak if needed.
  • Once happy, add to a jar and add to the fridge. If mixture is quite runny, know that it will firm up once chilled. Add to pastas, salads, tarts and more.
