An Easy Dish to Serve Up this Summer…
I love a good easy dish for summer, and this toasted baguette and herby cheese dip is perfect. If you can’t tell, a lot of the things I like to eat during the summer are light, fresh and require very little cooking. This dish I find is perfect for warm summer evenings. Ideal for sharing, so you need to make this for your next dinner party.
This dip is so easy to make, it’s just cheese and fresh herbs. I love chives and basil, it goes perfectly with the cheese that I picked. The cream cheese with the strong goat’s cheese is perfect. However, you could just go with the cream cheese or any other soft cheese. Same with the bread. You could also use a sourdough loaf instead.
Again, it’s important the type of platter you serve this gorgeous dish on. This serving dish with a salad would be perfect for your next dinner party. However, if you fancy an indulgent snack, then go straight from the oven dish to your place. It’s exactly what I would do on a cold evening. This toasted baguette and herby cheese dip are so comforting.
Toasted Baguette & Herby Cheese Dip
- 100 g goats cheese
- 300 g cream cheese
- ½ cup basil
- ½ cup chives
- olive oil
- sea salt & pepper
- small baguette
- Preheat your oven to 200 degrees. In a mixer, add your cheeses, chives, basil and a little bit of olive oil and mix until combined. You're aiming for a nice consistency.
- Take the baguette and cut it into thick slices and carve out the top. Keep the ends to whole the baguette in place.
- Spread the mixture on top until the gaps are covered and the top is even. Drizzle over some olive oil and spread over the bread. Place in the oven and bake for 8- 10 minutes until the edges are golden and crispy.
- Sprinkle over more chives, black pepper and salt and serve immediately.
