Perfect for Outdoor Entertaining…

With the weather starting to get nicer, all that is on my mind right now is outdoor entertaining. We are slowly making over our garden and I cannot wait to start hosting some alfresco dinners. In particular, I’m looking forward to hosting a pizza night. Pizza’s are so easy to make and absolute fun to create. We don’t have a pizza oven (yet) but we’re looking forward to investing in the Ooni pizza oven. I cannot wait to play hostess with the mosts and entertain friends at our homes.

This summer veggies pizza recipe was inspired by a recent holiday to the Cotswolds. I had something similar at The Wild Rabbit and I just had to try and recreate something similar. Personally, I’m not a fan of tomato-based pizzas. I’ll have them if they are on offer, but I’d much rather have a white-based pizza any day.

I can’t stress how delicious this pizza is. You’re going to absolutely love it. It can be customised. If you’re not a fan of these summer veggies, you could swap them out for something else.

INGREDIENTS.

pizza dough (handmade or store-bought)
2 tbs extra virgin olive oil
1 tbs Italian dried herbs
1/2 tsp smoked paprika
1 tsp chilli flakes
3 cloves garlic, chopped
parmesan, grated
grated mozzarella
burrata cheese
Cavo Nero or kale, chopped
tender stem broccoli, chopped
pine nuts

 

SUMMER VEGGIES PIZZA.

Position the oven rack in the upper third portion of your oven. Preheat the oven to the highest temperature it can go up to, at least 30 minutes before baking. If using a pizza oven, start prepping this. In a bowl, mix the olive oil, Italian herbs, paprika, chilli flakes, garlic and a pinch of salt and pepper.

Heat up a frying pan on mid-high heat and add a little olive oil. Add your broccoli and Cavo Nero and fry until soft but a little crispy (roughly 10- 15 minutes). Meanwhile, lightly flour a surface and roll out your pizza dough until thin. Place the dough on an oiled tray or pizza stone. Spread the herb/ oil mix and then top with the parmesan and grated mozzarella. Slide the pizza into the oven and bake for 10 minutes.

Pull the pizza out and add the veggies, burrata, pinenuts, a little olive oil and salt and pepper. Bake for another three or five minutes until the crust is golden and the cheese has melted. Cut into slices and enjoy!
