Spiced Apple and Maple Cake
A Little bit of Spice to Keep You Warm During this time of Year…
I love a spiced apple cake around this time of year. Something sweet with spice to keep you warm when it’s cold and something to compliment your coffee in the afternoons. This cake can be made as both a round cake or a loaf. If going larger, just increase the amounts.
This spiced apple and maple cake is the perfect bake for a rainy weekend, which we have been having a lot of recently. These drizzly days are making me crave comfort, getting cosy. And a cup of coffee and cake is the perfect way to feel cosy. When I made showed it off on my Instagram the other weekend, you guys were begging for the recipe! It’s also such a simple cake to make, you’ll spend the morning making it, and the afternoon devouring it…
INGREDIENTS.
CAKE.
1- 2 large apples, diced into chunks
1 tbsp brown sugar
250g butter
1 tsp ground cinnamon, nutmeg and ground cloves
3 eggs
1 tsp vanilla extract
2 cups flour
1/2 baking powder
pinch of salt
FROSTING.
200g cream cheese
6tbsp icing sugar
cinnamon sprinkled for seasoning
2 tbsp maple syrup
SPICED APPLE & MAPLE CAKE.
Preheat your oven to 200 degrees and line your loaf tin with baking paper. In a bowl, mix the flour, baking powder, salt, nutmeg, cinnamon, cloves, vanilla extract and sugar. Once combined, add the butter until the mixture compares bread crumbs. Chop up the apple and add to the mixture. Finally, add the eggs and mix the mixture until smooth.
Add the mixture to the loaf tin and place in the oven for 30- 40 minutes until cooked. Place to one side and allow to cool. Whilst the cake is cooling, make the frosting. Mix the cream cheese with the maple syrup and icing sugar until its a smooth. Place into the fridge to cool and stiffen. Once the cake is completely cooled, place the cream cheese frosting on top and sprinkle some cinnamon on top. Enjoy a slice with a cup of coffee.
