Summer Cookbooks For Fabulous Recipes

Lighter Meals for Those Hotter Days.
With the hotter weather coming in, my husband and I have been changing up our eating habits and looking to our summer cookbooks for inspiration. Whilst I’ve been on a health kit this year, I always love fresh salads and lighter meals during this time of the year. I guess it’s natural with the warmer weather. I also find that cookbooks with summer recipes tend to be much friendlier to a vegetarian and pescatarian dishes. Which helps adds variety to our weekly meal plan.
There are so many places that I look for recipe inspo (especially on Pinterest). However, since working from home, I’ve found I’ve had more time to take a deep dive into my cookbook collection for inspiration. My summer cookbook is slowly growing, but I do have a few go-to favourites that I always whip out at this time of year…
A YEAR OF BEAUTIFUL EATING.
I love all of Madeline Shaw’s books but this one is my favourite. Split into seasons, their summer section is my favourite. The book is filled with some fabulous salads and breakfast ideas. As always, I’m crushing on Madeline’s section and her fabulous dishes. In my opinion, I love her suggestion for a lunch salad. Also, her suggestions with what to do with fish are amazing. However, I have to say her sweet recipes are the best. I love to enjoy every now and then.
AUDREY AT HOME.
I’m obsessed with Audrey Hepburn. Therefore, as soon as I knew she had her own cookbook, I had to pick it up. As Audrey spent time in France and Italy, the recipes are very European. As they are used to glorious summer weather, her recipes and suggestions are suited for this time of year. For instance, she has a great take on a Caprasie salad which is right up my street.
LOVE & LEMONS EVERY DAY.
Out of all my summer cookbooks, this has to be my favourite. In other words, it’s my go-to cookbook. The recipes are utterly delicious, very much takes inspiration from the Southern states. My favourite thing about this gorgeous cookbook is very much a vegetarian cookbook. Perfect for me. Out of all the recipes, my favourites are the Mexican-inspired recipes. Especially the tacos, their black bean ones are amazing! Also, their recipes are super Instagramable, great for when you want to share what you’re having for dinner this evening.
