Festive Spiced Apple Cake
A sweet treat for the festive period…
I love the festive period for the food that is available. There’s just something about this time of year that makes us enjoy those sweet treats a little bit more. And hey, we should enjoy it. We’ve worked hard all year round, we should treat ourselves!
When thinking about a festive bake on the blog, I wanted to do something that was easy. Easy to make, easy to get the ingredients. I wanted to do something that you could make beforehand and bring home to the family for Christmas day that would impress people but also everyone would enjoy. This is where the idea of the spiced apple cake came from. I love a good fruit cake and I love apples.
This cake is from a bundt cake recipe, which looks impressive. Unfortunately, I don’t have a bundt tin or could find one in time to bake the festive spiced apple cake. It turns out, baking it in a normal cake tin is just as good and delicious. This cake is so delicious and will go down a treat for your family. Plus, it looks great on Instagram too, especially on a marble board!
INGREDIENTS.
250g unsalted butter
330g self-raising flour
200g caster sugar
3 tsp ground cinnamon
3 tsp ground ginger
pinch of salt
5 eggs
6 gala/ red apples
icing sugar, for dusting
SPICED APPLE CAKE.
Preheat the oven to 200 C. Line your cake tin with baking paper. Cream the butter with the sugar until pale and fluffy. Add the eggs and combine. Add in the flour, spices and salt to the bowl and stir until combined.
Peel and cut the apples into chunks. Add the apple to the cake mixture and stir until combined evenly. Spoon in the mixture to your cake tin and place in the oven for 55- 60 minutes until a skewer comes out clean. Leave until completely cooled before removing from the tin and resting on a cooling rack. Once cooled dust on the icing sugar on top for decoration. Serve each slice with a dollop of cream.
